Cheese bread
8-10 cups flour
1 large cake yeast
1/2 lb Longhorn cheese
1 cup sugar
1 cup milk
3 eggs
1/2 tsp salt
1 cup boiling water
1 stick butter or oleo
Place flour in a large bowl and make a well. In the center, crumble the yeast.
Add the combined lukewarm water and milk. Knead sugar with the cheese, salt, eggs
and melted butter.
Work with the dough, kneading it until it can be handled, dust with flour and
put in a warm,
quiet place for two hours to rise. Knead lightly again and let rise a
second time for 1 hour.
After the second rising, shape or braid into 3 long loaves. Let rise 1 hour.
Bake at 350 for 20 minutes. Reduce heat in oven to 325 and bake for
40 minutes more.
